撇出的香油,若不带浆渣就不要过滤,即为清香透明的小磨香油。剩下的油渣可做酱油、味精和点心馅等,但要注意及时食用,防止发霉变质,油渣多时可以干藏,石磨芝麻酱的好处在于原汁原味:不会使淀粉因高温熟化糊化,蛋白质面筋面性没有改变,维生素微量元素不被破坏,营养成分仍然存在。石磨中含多种矿物质微量元素,石磨和粮食自然摩擦,矿物质营养元素进入原粮中,天然混合,浑然一体,营养更丰富。
